A cool weather staple in Eastern North Carolina is a fish stew. Like many things in the South, there are a lot of opinions about what should be in one and how it’s done.

In 2023 I was in Charleston SC cooking at the Holy Smokes Charity BBQ event with our restaurant Sam Jones BBQ. Across from us the guys from Peche seafood in New Orleans were serving bites of redfish on the half shell. As I found time to get a break I stepped over for a sample.
