
Cast Iron Redfish

In 2023 I was in Charleston SC cooking at the Holy Smokes Charity BBQ event with our restaurant Sam Jones BBQ. Across from us the guys from Peche seafood in New Orleans were serving bites of redfish on the half shell. As I found time to get a break I stepped over for a sample. It blew me away how simple it was, yet so good. I spoke to them about the dish a few mins then walked away inspired. I couldn’t wait to get home and cook my version of this for my family. As I though how I would serve this, I was also reminded of an easy veggie salad my sister-in-law had made a few weeks prior. That mix was going to be the perfect complement served with the fish over a bed of rice. This is a meal that is light and fresh.
I have made this dish with trout, redfish and even snook (which was my favorite). Use whatever you have.
The butter is a handy ingredient to have living in your refrigerator for any meat or seafood.
Season your fish and allow to sit while you prepare your veggies.
For the veggie mix. Rinse all your produce and cut in to ¼ to ½ inch pieces. Combine all ingredients listed and mix well. This can be made in advance or even enjoyed as a standalone dish or side.
Heat up a pan over medium high heat. I prefer to use the 12” YETI Cast Iron for this. Place a couple slabs of your butter in the pan and allow it to begin to melt. Place your fish in the pan. Flip when you have achieved a nice golden-brown crust. As you cook feel free to baste the fish with the butter in the pan and add more if you choose. Cook the fish until your desired doneness.
I prefer to serve this over rice with the veggie mix spooned over the top. Finish with a few shakes of Fox Hollow All Purpose Salt
Compound Butter:
1 Stick of Unsalted Butter
1 Tbsp of Fox Hollow “The Original”
Allow butter to soften. Mix in seasoning. Use clear food wrap to reform butter stick and place back in refrigerator.
Fish:
Season all sides of fillets with Fox Hollow “The Original” Seasoning
Veggie Mix:
1/2 Red Onion
1 Cucumber
5 Small Sweet Peppers
1 Tsp Everything Bagel Seasoning
¼ Cup Ginger Dressing
1 Tsp Chili Crunch Oil
1 Tsp Sesame Oil
½ Tsp Fox Hollow All Purpose Salt
